Walk down the protein aisle of any Indian grocery store and you will find both sitting within a metre of each other: a packet of pale, dry soya chunks for under a hundred rupees, and a chilled or frozen pack of soya chaap for two or three times that. How Each One Is Actually Made
Soya chunks (soya nuggets, textured soya protein)
Soya chunks are made from defatted soya flour — the material left after oil is extracted from soybeans. That flour goes through an extruder under high heat and pressure, which reorganises the protein into a fibrous, sponge-like structure. The result is then dried. That is essentially the whole process: one ingredient, one machine.
Because the oil has been removed, chunks are extremely low in fat and extremely high in protein by dry weight. Because they are dried, they are shelf-stable for months at room temperature.
Soya chaap
Chaap is a different animal. It is made from a dough of soya flour or soya chunks combined with maida (refined wheat flour), and sometimes other binders. That dough is wrapped around a stick, then boiled or steamed. The wheat contributes gluten, which is what gives chaap its dense, chewy, layered texture — something chunks cannot replicate.
The presence of maida is the single most important fact in this comparison, and it drives almost every difference that follows.
Protein: The Numbers Side by Side
This is where the comparison gets misleading if you are not careful about dry versus cooked weight.
- Soya chunks, dry: roughly 50–52 g protein per 100 g. This is the number printed on the packet and the one everyone quotes.

Both are complete proteins with a PDCAAS around 0.9–1.0, meaning the amino acid profile is comparable to animal protein. Chaap's protein is slightly diluted by the wheat content, but wheat and soya are complementary proteins, so the amino acid quality does not suffer as much as the percentage drop suggests.
Carbohydrate, Fat and Sodium
Soya chunks: around 33 g carbohydrate and under 1 g fat per 100 g dry, with negligible sodium. Effectively a blank slate.
Soya chaap: around 15–20 g carbohydrate per 100 g, most of it from maida, and fat that varies enormously by product — some frozen chaap is packed in oil. Sodium also varies a lot, and marinated or ready-to-cook chaap can carry 400–700 mg per 100 g before you add any sauce.

What chunks do well and badly
Rehydrated chunks are spongy and highly absorbent. Squeezed properly and simmered, they soak up gravy exceptionally well, which is why they work in curries, pulaos, keema-style preparations and biryanis. What they cannot do is hold a sear or produce a chewy bite. They will never grill convincingly, and they turn rubbery if overcooked.
