If you have been told to eat "a diabetic diet" in India, you have probably been handed a list of what to remove: less rice, less roti, less potato, less sugar, less oil. Very little on that list tells you what to actually cook for dinner. The result, for most families, is a plate that feels like a punishment — boiled vegetables and a thin dal, eaten resentfully.
This curry is the opposite approach. It starts from flavour and works backwards. It uses plant-based protein as the centrepiece so the carbohydrate load stays low without the plate feeling empty, replaces cream and cashew paste with an onion-tomato base thickened by technique rather than starch, and lands at roughly 11-12g of net carbs per serving with 18-20g of protein. It tastes like a dhaba curry, not like a diet.

Why Plant Protein Suits a Diabetic Plate
The core problem in Indian diabetic cooking is that our default protein sources arrive attached to carbohydrate. Dal is roughly 20g of carbohydrate per cup alongside its protein. Rajma and chana are higher still. Paneer avoids that but brings saturated fat, which matters because insulin resistance and cardiovascular risk travel together.
Protein without the carb tax
Soya-based plant proteins invert that ratio. Textured soya protein delivers a high protein-to-carbohydrate ratio, which means you can build a filling main dish without spending most of your carbohydrate budget on the protein itself. That leaves room for a roti or a small portion of rice, which is usually what makes the difference between a meal someone sticks to and one they abandon by week three.
Fibre and glycaemic response
Soya protein also brings fibre, and fibre eaten alongside carbohydrate slows glucose absorption. In practice this means the roti you eat with a high-protein, high-fibre curry produces a flatter post-meal curve than the same roti eaten with a low-protein vegetable sabzi. The composition of the whole plate matters more than any single ingredient.

Ingredients
Protein base
- 1 pack GoodDot Soya Chaap, cut into bite-size pieces — or 1 cup Proteiz soya chunks, rehydrated and squeezed dry
Curry base
- 2 medium onions, finely chopped
- 3 medium tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 2 tbsp mustard or groundnut oil
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 1 tsp red chilli powder (adjust to taste)
- 1/2 tsp garam masala
- 1/4 cup unsweetened plant yoghurt or 2 tbsp almond paste (optional, for body)
- Salt to taste
- Fresh coriander to finish
What we are deliberately leaving out
- Cashew paste — adds 8-10g carbohydrate per serving for texture alone
- Cream — saturated fat with no nutritional upside here
- Sugar or honey — standard in restaurant gravies to balance acidity; we use slow-cooked onion instead
- Besan or cornflour thickeners — unnecessary if the base is reduced properly
Method
Step 1 — Sear the protein separately
Heat 1 tbsp oil in a pan on high. Add the chaap pieces or squeezed soya chunks and sear until browned on the outside, about 4 minutes. Remove and set aside. Searing first does two things: it builds Maillard flavour that you cannot get by simmering, and it keeps the protein from turning spongy in the gravy.
Step 2 — Brown the onions properly
This is the step people rush, and it is where the sweetness in a no-sugar curry comes from. Add the remaining oil and cumin seeds. When they crackle, add the onions with a pinch of salt and cook on medium for 8-10 full minutes, until deep golden. Not translucent — golden. The natural sugars caramelising here replace the spoon of sugar a restaurant would add.
Step 3 — Bloom the spices
Add ginger-garlic paste and cook 1 minute. Add turmeric, coriander powder and chilli powder, and stir for 30 seconds in the oil before adding anything wet. Ground spices need fat contact to release their flavour compounds — dumping them into liquid wastes half of them.
Step 4 — Reduce the tomato
Add the tomato puree and salt. Cook on medium, stirring occasionally, until the mixture thickens visibly and oil separates at the edges — 8-10 minutes. This reduction is your thickener. If you stop early, you will be tempted to add starch to compensate.
Step 5 — Finish
Return the seared protein to the pan. Add 3/4 cup hot water and the plant yoghurt if using, stirring it in off the heat first to prevent splitting. Simmer 5 minutes. Add garam masala, taste for salt, and finish with coriander.
Building the Full Diabetic-Friendly Plate
What to serve it with
One medium multigrain or bajra roti adds roughly 15-18g of carbohydrate. Two rotis plus this curry puts a full meal in the 40-45g carbohydrate range, which suits most moderate-carb diabetic plans. If you prefer rice, half a cup of cooked brown rice is a comparable swap.
The order you eat in
Eating the protein and vegetable portions before the carbohydrate portion measurably blunts the post-meal glucose spike. It costs nothing and requires no change to what is on the plate — only the sequence.
Add a salad, not a raita
A plate of raw cucumber, onion and tomato with lemon adds volume and fibre for almost no carbohydrate. It also slows the meal down, which helps satiety signalling catch up.

Variations and Batch Cooking
Higher protein version
Use both chaap and soya chunks together. It pushes the serving past 26g of protein without moving the carbohydrate count much — useful if you're also managing weight, since protein is the most satiating macronutrient per calorie.
Vegetable-heavy version
Add cauliflower florets, capsicum or french beans in step 4. All three are low-carbohydrate and add bulk. Avoid peas, corn and potato, which carry meaningfully more starch.
Batch and freeze
The gravy base freezes well for a month. Make a triple batch of the onion-tomato masala, freeze in portions, and a weeknight curry becomes a ten-minute job. Is soya safe for people with diabetes?
Soya is generally well regarded in diabetic nutrition for its protein content, fibre and low glycaemic impact. Some studies associate soya protein intake with modest improvements in insulin sensitivity and lipid profiles. Individual medical circumstances vary, so discuss any significant dietary shift with your doctor.
How many net carbs are in this curry?
Approximately 11-12g net carbohydrate per serving, based on three servings from the full recipe. Adding a multigrain roti brings the total meal to around 28-30g.
Can I make this without any oil?
You can reduce it to 1 tbsp total, but eliminating oil entirely hurts this recipe badly. Fat carries the fat-soluble spice compounds and slows glucose absorption. Reducing oil is sensible, removing it is counterproductive.
Is plant-based meat too processed for a diabetic diet?
